Bitter gourd (Margoz) with mustard seeds (4 pers.)


  • 500g of bitter gourd

  • 1 tbsp of salt

  • 1 tbsp of black mustard seeds

  • 1 tsp of turmeric powder

  • 1 branch of curry leaves

  • 2 garlic cloves

  • Vegetable oil for frying


  • Cut thin slices of bitter gourd and remove all seeds

  • Put it in a big bowl, add salt and mix well. Let it rest for 10 minutes

  • Wash the bitter gourd well and squeeze all the water

  • Heat oil in a pan and fry them by small quantities

  • While frying, mix mustard seeds and garlic in the blender

  • After frying remove excess oil by letting let the equivalent of only 1 tbsp of it

  • In the same oil, add mustard seeds and garlic paste, curry leaves and turmeric.

  • Stir for 30 sec.

  • Add the fried bitter gourd and stir well

  • Add salt if needed.

It’s ready!
